2. The Danger of Linear Scaling (Why Spices Don't Double)

Here is the most critical rule of scaling up recipes: Not all ingredients should be multiplied by the scaling factor.

Base ingredients—such as meats, vegetables, flour, and sugar—generally scale linearly. If you double the recipe, you double the chicken. However, this rule completely breaks down when it comes to potent flavorings.
