You’ve successfully done the math. You took a fantastic 4-serving chicken casserole and scaled it up to 8 servings. You chopped twice the onions, browned twice the chicken, and poured it all into a massive baking dish.

Now comes the final step: putting it in the oven. The original recipe says, "Bake at 350°F (175°C) for 30 minutes."
You pause and wonder: “Since there is twice as much food, should I bake it for 60 minutes?”

This is one of the most common and dangerous myths in home cooking. Assuming that cooking time scales linearly with ingredients will almost certainly result in dry, burnt, or ruined food.

The short answer is No, doubling a recipe does not double the cooking time. Let’s explore the physics of heat transfer to understand why, and how you should adjust your timers instead.

1. The Physics of Cooking: Temperature vs. Time

To understand why time doesn't double, we need to understand how food actually cooks. Cooking is simply the transfer of heat from an energy source (your stove or oven) into the food.

The time it takes for heat to penetrate food is determined by two main factors:

  1. The temperature of the heat source.
  2. The distance the heat has to travel (the thickness or depth of the food).

The total weight or volume of the food in the room is irrelevant to the heat penetration speed. A 1-inch thick chicken breast takes about 20 minutes to bake. If you put ten 1-inch thick chicken breasts in a massive pan side-by-side, they will all still take 20 minutes to bake. The heat only has to travel half an inch to reach the center of each piece, regardless of how many pieces there are.

2. Stovetop Cooking (Soups, Stews, and Boiling)

When cooking on the stovetop, you must separate the process into two phases: The Heat-Up Phase and the Cooking Phase.

  • The Heat-Up Phase: If you double a soup recipe, you are dealing with twice as much cold liquid. Your stove only outputs a fixed amount of energy. Therefore, it will absolutely take longer (sometimes twice as long) to bring that massive pot of liquid up to a boil.
  • The Cooking Phase: Once the liquid reaches a boil (212°F / 100°C), the temperature caps out. At this point, the carrots, potatoes, and meat submerged in the boiling water will cook at the exact same speed as they would in a small batch.

The Rule: Total time on the stove increases because of the heat-up phase, but the active simmering/cooking time remains identical to the original recipe. Do not boil your potatoes twice as long just because you made twice as much soup!

3. Oven Baking (Casseroles, Cakes, and Roasts)

The oven is where the "double the time" myth causes the most destruction.

If you double a casserole recipe, how you place it in the oven determines the cooking time.

Scenario A: Wider Pan (Same Thickness)
If you pour your doubled casserole into a pan that is twice as wide, the food maintains the exact same depth/thickness as the original recipe.

  • Result: The cooking time will be almost exactly the same as the original recipe (perhaps 5-10% longer just because the massive cold pan temporarily drops the oven temperature).

Scenario B: Same Pan (Twice as Thick)
If you stubbornly pour your doubled casserole into the original, smaller pan, the food is now twice as deep.

  • Result: The heat now has to travel twice as far to reach the center. If you simply double the time, the outside edges will be subjected to 350°F heat for an hour, turning them to dry charcoal, while the center might finally finish cooking.
  • The Fix: If you must bake something significantly thicker, you have to lower the oven temperature by 25°F (15°C) and extend the time (usually by 20-30%, not 100%) so the heat can penetrate slowly without burning the exterior.

4. Large Roasts (The Exception to the Rule)

There is one area where weight does directly impact time: roasting large, single-piece meats like a whole turkey or a prime rib.

If you buy an 8-pound roast instead of a 4-pound roast, the piece of meat is physically thicker and rounder. The heat has to travel a much greater distance to reach the dead center of the roast.
In this specific case, cooking time is calculated by weight (e.g., "15 minutes per pound"). However, even then, an 8-pound roast does not always take exactly twice as long as a 4-pound roast due to the shape and surface area. Always rely on a digital meat thermometer to determine doneness, not a clock.
