The Mechanics: Percolation vs. Immersion

The V60 (Percolation): In a V60 pour-over, fresh water is constantly poured over the coffee bed. The water extracts flavors as it travels through the grounds and drips out the bottom through a paper filter. Because fresh, clean water is continually introduced, extraction is highly efficient. However, the water only touches the coffee for a short time.

The French Press (Immersion): In a French press, all the water and all the coffee sit together in a chamber for the entire brewing duration (usually 4 to 5 minutes). The water quickly becomes saturated with coffee solubles, which slows down the extraction rate over time.

V60 Brew Ratio: Precision and Clarity

The Hario V60 is designed to highlight the subtle, complex notes of a coffee—its acidity, floral aromas, and fruitiness. Because it uses a paper filter, all the heavy oils and microscopic coffee particles (fines) are trapped, resulting in a cup that is visually clear and texturally clean (a "clean cup").

The Ideal V60 Ratio

Because percolation is an efficient extraction method, using too much water will quickly lead to over-extraction, pulling out dry, bitter, and astringent flavors.

The universally accepted sweet spot for the V60 is a 1:15 to 1:16 ratio.

  • 1:15: Great for light roast African coffees where you want a punchy, vibrant acidity and a slightly thicker body.
  • 1:16: The golden standard. It provides a beautifully balanced, sweet, and articulate cup of coffee.

V60 Recipe Example (1:16 Ratio)

  • Coffee: 19 grams (Medium-fine grind, like table salt).
  • Water: 300 ml (or grams) at 93°C - 95°C.
  • Process:
    1. Pour 50g of water to bloom the coffee (wait 45 seconds).
    2. Slowly pour water in concentric circles up to 180g. Wait for it to drain slightly.
    3. Pour the remaining water up to the 300g mark.
    4. Total brew time should be around 2:30 to 3:00 minutes.

French Press Brew Ratio: Body and Richness

The French Press is the opposite of the V60. It uses a metal mesh filter that allows coffee oils and fine particles to pass directly into your cup. This creates a coffee with a heavy, syrupy body, intense mouthfeel, and deep, chocolatey/nutty flavors.

The Ideal French Press Ratio

Because immersion brewing is slightly less efficient at extracting flavors (since the water becomes saturated quickly), you generally need a slightly lower ratio (meaning more coffee relative to water) to achieve a strong, flavorful cup.

The ideal starting point for a French Press is 1:14 to 1:15.

  • 1:14: A bold, intense, "wake-me-up" style cup with a very heavy body.
  • 1:15: The standard recommendation for a balanced, full-bodied cup without excessive bitterness.

French Press Recipe Example (1:15 Ratio)

Let's brew a larger batch, perhaps to share. We want to make 600 ml of coffee.
Math: 600 / 15 = 40 grams of coffee.

  • Coffee: 40 grams (Coarse grind, like sea salt. If it's too fine, it will pass through the mesh and create mud in your cup).
  • Water: 600 ml (or grams) at 94°C - 96°C.
  • Process (The James Hoffmann Method):
    1. Add the coarse coffee and pour all 600g of water vigorously to saturate the grounds.
    2. Wait exactly 4 minutes. A crust of coffee will form at the top.
    3. Take a spoon and gently stir the crust to break it. Most of the coffee will sink.
    4. Scoop off the remaining foam and floating bits from the top and discard them (this removes bitterness).
    5. Wait another 5 to 8 minutes. Do not press the plunger down hard; just lower it to the surface of the water to act as a strainer, then pour gently. This patience yields an incredibly clean French press cup.
